Kevin's Luscious Lemon Ice Cream

5 c whole milk 2 c heavy whipping cream 3 1/2 c sugar 1 c, 2 oz lemon juice, fresh squeezed 1 12 oz can evaporated milk 1 1/2 tsp lemon extract 20 lbs ice 1 20 oz box of ice cream rock salt

Mix all ingredients but lemon juice in 4 quart canister. Mix in lemon juice. Set canister in ice cream maker. Fill 1/4 with ice. Sprinkle on 2/3 c. rock salt. Repeat 4 times. Churn for ~15-20 minutes, until the ice level has gone down some, about an inch. Add more ice and 1/2 c rock salt as often as there is room to. If the mixture becomes too watery, dump out water and add more ice and salt. It goes faster if not in direct sunlight or in a hot day. The sound is less annoying if you do it in a room you are not using.
