Lemon Lime No Bake Cheesecake Cups

3 blocks cream cheese, softened 1 cup sugar 1/3 cup fresh squeezed lime juice (4 limes) Zest of 2 limes 3 eggs 3 cups heavy whipping cream 1/3 cup fresh squeezed lemon juice (2 lemons) 1 Tablespoon vanilla 1/3 cup sugar Raspberries Mint leaves

Beat cream cheese and sugar until smooth. Add lime juice, zest and 1 egg. Beat 1 minute. Add egg, beat 1 minute, add last egg, beat 1 minute. In a separate bowl whip the cream with vanilla and sugar. Add lemon juice the last 30 seconds. Now fold the whipped cream mixture into the cream cheese mixture. Put into cups, chill and serve with raspberries and mint leaves. Enjoy!
